This recipe comes from the JLO Art of Cooking Junior League of Ogden Cookbook.
4 cloves garlic, sliced
2 tsp. salt
4 tbsp. vegetable oil
4 tbsp. apple cider vinegar
2 tbsp. sugar
16 Roma tomatoes
2 sweet yellow onions
2 purple or red onions
2 orange bell peppers, seeded, diced
2 red bell peppers, seeded, diced
2 yellow bell peppers, seeded, diced
1 purple bell pepper (or green), seeded, diced
3 Anaheim chili peppers, diced
2 orange habanero chilies, diced
Peel and slice the garlic cloves, put in a bowl and cover with salt. Mash with a fork until it is a paste-like consistency. Add the oil, vinegar and sugar and mix well. Peel, core and dice tomatoes, onions and bell peppers (remove seeds). Do the same with chili peppers, but include seeds. Mix all ingredients together, except chilies. Add these to taste, depending on desired hotness.
