Recipe: Drunk Chicken

This recipe comes from the Standard-Examiner Recipe Exchange Cookbook and was submitted by Connie B. Coss.

Ingredients:

  • 1 whole chicken
  • 1 can beer
  • Salt and pepper to taste

Instructions:

Heat oven to 350 degrees. Remove giblets from inside of chicken and discard or save for another use. Rinse and pat chicken dry.

Wash outside of can of beer, open and pour into shallow baking pan about 1 inch of the beer.

With a can opener, punch more holes in top of can. Set chicken on the can by inserting can into chicken cavity. (The can and legs act like a tripod.)

Put a tent of aluminum foil over top of chicken. Bake at 350 degrees for 1 1/2 hours. Remove foil and continue baking another 1 1/2 hours. Add water to pan as needed.

Carefully remove can from chicken and cut into serving pieces.
