Here are a few of April Maw’s favorite recipes.

Clean Mayo

1 room temp egg

1/2 fresh lemon squeezed

1/2 tsp salt

1/2 tsp dry mustard

1 cup avocado oil or light olive oil

Break egg first into blender then top with lemon juice, sald and mustard. blend and then slowly add the oil through the hole in the top of your blender. The slower the better and the frothier. It takes about 2 min to get the right consistency.



(an immersion stick blender is idle)

The mayo is great for chicken salad

clean ranch, shredded chicken, grapes, celery, apples and seasoings to taste. Roll in a lettuce leaf.

Clean Ranch

1 cup clean mayo

1/2 cup canned coconut milk

1/2 tsp onion powder

1 tsp garlic powder

1 tsp fresh dill (fresh is best)

1/2 tsp sea salt

Mix all ingredients and enjoy.

I had two favorites meals while I did the whole30.

I loved buffalo chicken sliders on a sweet potato fritter and taco meat over a sweet potato.

Buffalo Chicken Sliders

1 lb ground chicken

1/2 cup chopped celery

1/2 cup shredded carrots

1/4 cup chopped green onion

1/4 cup Franks Hot Sauce (whole30 compliant)

1 tsp garlic

1 tsp onion powder

1/2 tsp sea salt

1/2 tsp pepper

Mix all ingredients in large bowl. Form into small patties and pan fry or grill.

Sweet potato fritters(as your bun)

1 sweet potato grated

1 egg white

season to taste-salt, pepper, onion powder and garlic powder

Form into little patties and fry in avocado oil or EVOO in a hot pan cook till crispy.

Put your patty in between two sweet potato fritters and top with clean ranch dressing and more Franks Hot Sauce. AMAZING!!!!

I made up a recipe my self and loved it!

Pierce a sweet potato with a knife all over and put in the microwave for 7-9 min Turning over half way. Top with taco meat, avocado or guacamole and fresh tomatoes.

Clean Taco Meat Seasoning

2 TBSP chili powder

1 tsp cumin

1 tsp garlic powder/salt

1/2 tsp oregano

mix together and put over cooked ground beef or turkey with about 1/4 cup water.

I also loved egg muffin cups

Egg muffin cups

8 eggs

sauteed chicken sausage

diced onion

spinach

diced green pepper

salt and pepper

rub muffin tin with olive oil and pour egg mixture in. Bake at 350 degrees for 20-25 min.

My favorite "snack" I made up and call Heavenly Dip

1 TBSP Almond butter

1 TBSP Coconut butter (you have to warm it a bit so its runny so you can mix it)

Mix together and dip your apple, banana, finger in it. I couldn't believe it was ok to eat it.
