FARMINGTON -- A jury trial set for a man police say stabbed a Bountiful woman 51 times has been delayed again.
Phillip Joseph Simmons, 39, who is charged with first-degree felony murder, appeared Tuesday in 2nd District Court in Farmington.
A four-day trial was set to begin Nov. 14, but has been continued until Feb. 6, 2012.
Defense attorney Mark Arrington said his expert witness, Dr. Vickie Gregory, had just recently received medical reports concerning Simmons.
Arrington said it will take several weeks for Gregory to compile the reports to determine if Simmons was mentally competent at the time of the stabbing Jan. 20, 2008.
Police said Simmons stabbed Suzanne Fry 51 times with a steak knife in her Bountiful apartment after they argued about food she had prepared. Police found Simmons two blocks away from the apartment.
Simmons has been held at Utah State Hospital.
