If you’re accustomed to seeing cauliflower drowning in a cheese sauce, this pilaf — light, bright and modern — will be a revelation. The cauliflower is combined with couscous and dressed with lemon, garlic and parsley. Serve with roasted or grilled chicken or salmon.
