LAYTON -- It took close to seven years, but those associated with Kneaders Bakery & Cafe say the wait will be worth it.
Kneaders, which has 10 locations in Utah and two in Arizona, is planning to open its next location in Layton.
"We've been looking in Layton for seven years to try and get something on Antelope," said Josh Boshard, director of operations for Four Foods Group.
"It's been hard because we wanted to have a drive-through and that's kind of the hard part, finding a place for that."
Kneaders, which started in 1997 in Orem, will build on the northwest corner of Antelope Drive and Hill Field Road. It will be next to Starbucks and Discount Tire.
Boshard said construction should begin this month, and they are hoping to open the shop by the end of July.
"It's a great restaurant and has been doing great business in other locations," said Ben Hart, the economic development specialist for Layton. "Again, it shows things are coming back, and it shows Layton is going to be the magnet. We're going to get those great restaurant chains."
Hart said more restaurants are on their way to Layton. However, those plans are still in the early stages, and he said he could not discuss them yet.
Kneaders is a "from-scratch" bakery, and features all of its items with no preservatives. Boshard said everything in the store is made fresh the day of sale.
"Every morning the pastry chef brings out the pastries, and at end of day we pull out bread and donate it," Boshard said.
Boshard said the unsold food from each day gets donated, mostly to shelters.
The Layton location will be Kneaders' northernmost shop, with the next-closest being in North Salt Lake.
"I think this will be something that is very new and very fresh," Hart said. "(Kneaders) will be a new concept for Layton city."
