Cosmopolitan fusion

Kirk Dean has owned various restaurants throughout his career, and Elio Scanu has several years behind him as a professional chef around the world and at Snowbasin ski resort.

So it was a natural fit when the two came together to open Zucca Trattoria in 2008.

Over the years, the menu has changed with the seasons and Chef Scanu's style has evolved from a classic French and Italian technique to a cosmopolitan fusion.

Elegant dining

In December 2009, Huntington Bistro opened in Earl's Lodge.

Snowbasin's dining options have a good track record, having received awards from Ski Magazine and Salt Lake Magazine. And no expense was spared in creating an elegant dining room for this newest restaurant, decorated as it is with custom-weave carpeting from England, an elaborate fireplace, soaring windows to showcase mountain views, and white oak and hand-cast bronze finishes throughout.

An enormous Italian glass chandelier completes the ambience for skiers and visitors to the resort who are looking for classic international fare.

Mount Ogden Grill: No longer a big secret

Josh Rhees and his mother, Bernice Kelley, made their debut as restaurant owners when they opened the Pleasant Valley Grill in South Ogden in 2008. They sold their restaurant at the end of 2009 and Rhees later became the manager of the Mount Ogden Grill. Kelley retired.

The Mount Ogden Grill, located behind the Mount Ogden Surgical Center, is owned by several of the surgical center's physicians. The physicians originally opened the Mount Ogden Cafe in 2009. In the spring of 2010, the cafe closed and reopened under its new name with a different menu and Rhees as the manager.

Rhees takes a hands-on approach, serving by day and cooking at night. Hand-cut certified Angus beef steaks are his specialty. They are cooked at 1,650 degrees Fahrenheit in an infrared broiler. The intense heat sears in the juices and flavor, and the steaks are served at a sizzling 500 degrees.

Fresh Mex

Joe and Alicia Cottam, husband and wife co-owners of Bella's Fresh Mexican Grill, come from a family with a long history of operating Mexican restaurants.

After working for several years waiting tables and managing restaurants together, the Cottams decided, with the help of Joe Cottam's parents and several other family members, to build their own place near the freeway in Farr West.

They began construction in 2002 and sold their food from a portable unit in the parking lot until they could officially open the doors with the name "Melina's" in 2003. Though Joe and Alicia Cottam are the owners of the restaurant, they feel like it belongs to the whole family.

Moore's a family affair

Maria Valenzuela's family has been in the restaurant business for more than a half a century.

Her father and his three siblings started working at a chain restaurant in their youth. Later, her parents, David and Anita Moore, bought the Park Cafe in Ogden and turned it into Moore's Family Restaurant.

Thirty-two years ago, they purchased Dick's Cafe in West Haven and converted it to a second Moore's Family Restaurant.

Maria Valenzuela remembers working as a dishwasher in her parents' restaurant when she was 12. From there, she worked her way up to becoming a cook and a waitress. In 2000, she started running the West Haven location and is now the owner.

BACK TO THE FUTURE: No Frills Diner serves up foods from the '50s

Ron Yeates, owner of No Frills Diner, says he has always loved cooking.

His first job as a teenager was at a restaurant. He worked for a company for 27 years, but continued to cook for and manage various restaurants on the side. At one point, he even owned a sports grill for a year. When he was laid off because his company closed down, buying a restaurant seemed like the natural next step.

Nick Morris and Lance Smith deliberated for a while over what to do about the cafe for sale across the street from their home, and then decided to take a chance. They became co-owners of Kaffe Mercantile on July 1, 2009.

Filling the 'great coffee' niche

Johnny and Anne Morris were both working in the food and beverage service industry when they met and married. In 2007, they opened Cafe Ville Bella, fulfilling Anne Morris' dream to run her own coffee shop.

Smokin': Thompson's delivering smoked goods to the Top of Utah

In 1978, Bill Soffel opened a smokehouse in the Utah town of Stockton. The smokehouse later moved north to a new location in Tooele County. In 1983, Merle and Ann Thompson took over ownership and the smokehouse became known as Thompson's. In 2006, their son Robbie Thompson became the owner.
