RIVERDALE — There’s more development going on at Riverdale Town Square.
Two new eateries will join Chipotle, Habit Burger and Pollo Loco at the Riverdale Road shopping development in coming months. A new waxing salon will also be opening soon.
Crumbl Cookies, a popular gourmet cookie bakery, will open its 19th Utah location sometime in June in Riverdale. An opening date for the bakery hasn’t been set yet; the company usually announces a new store opening on its Facebook page a week beforehand.
Crumbl specializes in large chocolate chip and frosted sugar cookies, and offers four specialty flavors like raspberry cheesecake or coconut pretzel each week. The store also offers home delivery to customers.
The bakery also has locations in Layton, Logan and Bountiful, and has expanded operations to five other states. Two cousins opened the company in 2017 in Logan.
Zao Asian Cafe is also expected to open a new location in Riverdale, according to developer documents on Riverdale Town Square. Zao is an Asian fusion restaurant that serves rice bowls, tacos and salads. Outside of Salt Lake City, Zao has one location in Bountiful and two in Utah County.
LunchboxWax, a full-service waxing salon, is also listed as a new tenant in the retail development. The Idaho-based franchise has locations in Sugarhouse and Cottonwood Heights.
A second Starbucks location is in the works further east on Riverdale Road.
The site of a former Papa John’s Pizza and Chevron gas station at 4104 Riverdale Road will be redeveloped into a retail plaza and Starbucks location, according to site plans submitted to the Riverdale Planning Commission.
The location will have a drive thru and more than 40 parking spots for several retail sites. Starbucks is the only confirmed tenant for the development. The planning commission approved preliminary plans for the site at its March 12 meeting.
Riverdale currently has two Starbucks locations — one at 1140 W. Riverdale Road and one inside Target at 1135 W. Riverdale Road.
