Irey Market Garden brings farm-to-table experience to Weber County

Farm to Table by Irey Market Garden is owned and operated by Dan and Tawnie Irey. Started in 2020, they were inspired by the idea of market gardening, growing a variety of produce in a small space.

Their shop is unique because they grow all of their microgreens on-site. “Microgreens are vegetable plants harvested around 10 to 14 days after planting. At this stage, they are up to 40 times more nutrient-dense than their mature counterparts,” says Tawnie Irey. “All of our products include microgreens because our goal is to improve the health and well-being of our local community.”

Customers are invited to take a little tour of the indoor farm and kitchen at the shop. In the kitchen, they make fresh microgreen fruit smoothies, microgreen salads and many freeze-dried microgreen products including smoothie mixes, treats and trail mixes. Their farm and kitchen are dedicated to gluten-free, refined sugar-free and vegan foods.

Freeze-dried microgreen products are a specialty that not many can offer. Originally, the shop was just growing vegetables, lettuce mixes and microgreens. But after much of it was going to the chickens, they started researching how they could preserve the microgreens that didn’t sell. After the Ogden Farmers Market, they soon found Family Freeze Dry, of Harrisville, which began helping them freeze-dry the microgreens. “We were not sure at first what we would do with them but soon enough ideas started flowing, which led us to where we are today,” says Irey.

The Ireys are passionate about bringing nutrient-dense food to the Ogden community. Irey says, “We’re inspired by real food grown locally in a sustainable way. We are also inspired by growing and distributing food in a way that limits our impact on the environment. The majority of our packaging is compostable, something we have done from the very beginning of our journey.”

The couple has also been inspired by the Ogden community, especially the market community. “We have met so many wonderful people at the different markets we attend and are excited to contribute to this great community,” says Irey.

The shop’s grand opening is Saturday, June 11, from 4 p.m. to 7 p.m. and will be open-house style at 196 W. 21st St., Suite B. The shop will be giving out free MicroPops (vegan microgreen fruit popsicles) for people to try, as well as a BOGO deal on all smoothies and salads that will last throughout the month of June. During the grand opening, they will be giving farm tours so customers can see where everything is grown and made.
