Eggs Bandito for brunch at Roosters Layton on Sunday, March 17, 2019.

Does brunch sound like a lovely idea until you get to the part where you wait in line with hordes of people after driving around the block multiple times to find a parking spot?

I have a solution!

Head out to Roosters’ Layton location. It’s the same great brunch, lunch, dinner, dessert, drinks and beer menu as the 25th Street location, but parking is a cinch and you won’t have to fight crowds to get a seat.

Opened in 2015, a decade after the flagship brewery and restaurant hit Ogden, the Layton location brings everything you expect from Roosters to Davis County. There’s a bar if that’s your preferred way to dine, along with regular indoor and patio seating. What you won’t find are stairs. This location is laid out on one large, open level.

The regular menus in Layton are exactly what you find in Ogden.

Are you the savory brunch type? Try the Eggs Bandito. This dish stacks a slice of grilled ham, tomatoes, two eggs cooked how you like and jalapeno hollandaise on top of a green chile-loaded quesadilla, plus toast, Roosters potatoes and homemade salsa with good heat on the side.

Prefer your eggs in omelets? Roosters’ regular version features roasted asparagus and crab. Check the specials board for different twists on this breakfast classic. Last Sunday, the specials included a shrimp omelet.

For those with a sweet tooth, you’re fully covered. Roosters goes the extra mile with bread pudding french toast, which is simply bread pudding fried and topped with caramel sauce and whipped cream. You can also get classic pancakes or a Kahlua — no alcohol — waffle.

Had you planned to go to brunch, but you’re ready for lunch by the time you get there? Roosters’ regular menus will not disappoint.

There’s a lunch menu loaded with sandwiches, pasta, tacos and fancier dishes. My favorite is the Pepper Jack Mac-N-Cheese. This dish is consistently a creamy, cheesy dream.

To get your lunch or dinner started, you have to try the Beehive Cheese Curds. Beehive Cheese is delectable on its own; deep-frying it takes it to a crispy level that will give your tastebuds a texture adventure.

Nothing beats combining exquisite craft beer with a hearty burger. Roosters “ninerizes” onions and stacks them on 9 ounces of beef along with pepper jack cheese and chipotle sauce for a unique burger. Pair it with Niner Bock Beer — the “ninerize” ingredient — to round out the brewery burger flavor.

You can also get more traditional burgers and a deadly Double Bypass Bacon Burger. Or add a bit of farm-style spice and order the Green Chile Farm Burger that includes grilled ham, a fried egg and, you guessed it, green chiles.

The dinner menu includes fancier plates, including Baked Chicken Milano, Tuscan Beef Medallions, salmon and steak, alongside TACOS. Who doesn’t love tacos? Get a taco platter that includes three tacos with rice and beans. You get to choose from fish, shrimp, buffalo ranch calamari, carne asada or “veg head.”

What’s an evening at a brewery without the beer? Roosters sports a variety of styles — from IPAs to bocks, and pale ales to stouts. My on-tap favorite is the O-Town Nut Brown. For bottled beer, it’s a tie between Niner Bock and Iron Rooster Imperial Stout. One beer you will want to be sure to try, because it’s only available at the Layton location, is the Diamondback Ale — a sneaky copper ale with a bite.

I can’t promise that you won’t wait to get a table at any given time at this location, but even a short wait is worth the atmosphere, food and beer. Or if you can’t stand the idea of waiting, get a group together for brunch, lunch or dinner — Layton is a convenient location for people from Salt Lake to Brigham City — and call ahead to reserve a table to ensure quick seating.
