Café Bloomm is blossoming in Roy

Some places serve great coffee. Other places serve great food. Café Bloomm does both, says proprietor Marikh Mathias, who opened the Roy coffee shop last fall.

“I’d always search for good coffee and good food, but could never find them together at the same place,” Mathias said. “Here, you can get both, and it’s convenient. We create everything made-to-order, so it’s hot and fresh.”

Some people order online, or at the drive-thru window on their way to work. Others prefer to come inside to sip coffee or enjoy a leisurely breakfast or lunch.

The menu is small enough to execute well, while covering a variety of sweet and savory tastes.

The signature pretzel bun egg sandwich uses a pretzel bun, made by a company called Pretzilla, Mathias said. The bun is a lot like a soft pretzel — slightly chewy on the outside, soft on the inside. It’s filled with fluffy, soft-scrambled egg, white cheddar and bacon, and laced with house-made dijonnaise dressing.

“It’s the perfect breakfast sandwich,” said Mathias, who considers it her favorite dish on the menu.

“Fluffy” eggs are a menu staple. Soft-scrambled with butter, “They are really pillowy, and they go perfect on the sandwich and inside the burrito, and as a side with bacon or hash browns. It’s a really comforting way to eat,” Mathias said.

Avocado toast is another customer favorite. Slices of avocado are fanned out on rustic sourdough bread that’s been spread with house-made romesco sauce and topped with olive oil and microgreens.

On the sweeter side, the Nutella banana bread has an interesting twist. Nutella is spread over a thick slice of banana bread and topped with bananas. The bananas are flamed with a brulee torch to caramelize the bananas’ sugar, similar to creme brulee.

“Everyone who tries it, loves it. Nobody ever regrets it,” Mathias said.

Lunch choices currently are the Bloomm Burger (also with a pretzel bun), a fried chicken sandwich and a recently added rotisserie chicken sandwich.

“It’s something I have been doing for my family for years,” Mathias said. “Once you taste it, you’ll want it all the time.”

It’s rotisserie chicken, white cheddar, mayo, lettuce and tomatoes on toasted sourdough bread.

Breakfast and lunch are served all day, from 7 a.m. to 5 p.m. “So if you want a burger at 7 a.m., you can get it,” Mathias said.

The coffee comes from Wasatch Roasting Company in Ogden. The salted caramel pretzel latte is a signature drink — espresso, salted caramel, pretzel simple syrup and a choice of milk.

“It’s a play off of our pretzel bun,” Mathias said.

Mathias has spent years working in restaurants with her parents, including Aroma Fine Indian Cuisine in Draper and the former Karma Indian Cuisine in Sandy. She also got some national buzz as a contestant on “The Bachelor” TV series in 2018.

“I had a catering company with my parents, but during COVID, nobody was doing caterings,” she said. “So I started working as a private chef in Park City, and I was able to really hone in on my cooking skills.”

Her parents bought the Roy building — a former coffee shop and diner — as an investment.

“They were going to rent it out, and I thought, why don’t I give this place a shot, give it a new life?” Mathias said. “It took a year and a half to renovate it. I wanted to put my own spin on it.”

She chose the name “Bloomm” because “One of my favorite characters on a TV show was named was Ezra Bloom, and I really liked that name.”

Because her initials are MM, she decided to add the double “M” to the name Bloom, “To make us a little unique.”
